Style: Saison aged in Cinsaut wine barrels
Man, we love being Idaho brewers! There’s such a wealth of brewing opportunity here from the incredible bounty of fruits, herbs, woods, etc that exist here, not to mention rad folks to collaborate with! Saison Cinsaut is the crux of such things. Our friends and neighbors at Split Rail Winery/Strange Folk, who make amazing wine using grapes grown in the Snake River AVA. One such wine was a single varietal using Cinsaut grapes. The day they emptied their barrels we picked them up and filled them with freshly brewed saison. After 3 months of aging we puréed 30 lbs of fresh, local strawberries from Smith Berry Farm in Payette, Idaho and continued aging for another 3 months. The result was a beautiful saison with a rosy hue, bright berry nose with hints of oak, plump fruited body with soft strawberry, hay, grape skin and oak tannins and a lasting dry finish.
